Marcos Varas

Marcos Varas joined the Columbia Dining team in 2024. In this role, he is responsible for the oversight and support of daily culinary operations at Ferris Booth Commons. Prior to joining the team, Marcos held positions in hotels, restaurants, and event catering. Marcos is a graduate of the French Culinary Institute and the Institute of Culinary Education. Born in Argentina, he grew up in a large family where memories were made around the kitchen table, fueled by their passion for food and soccer. Marcos grew up in Queens and is grateful to experience and contribute to New York’s rich and diverse culinary melting pot.
