Menus of Change

Columbia Dining has been a member of the Menus of Change University Research Collaborative since 2016. 

    The initiative, jointly led by The Culinary Institute of America and Stanford University, was developed to optimize nutrition and public health, environmental stewardship and restoration, and social responsibility through menu creation.

    What does our membership mean?

    As a member of Menus of Change (MOC), our mission is to advance healthier, more sustainable life-long food choices among Columbia students and adhere to the following MOC principles, as much as possible:

    • Transparency in food sourcing and preparation
    • Buying fresh, seasonal, and local 
    • Focusing on whole, minimally processed foods
    • Celebrating cultural diversity and discovery
    • Offering meatless menu options
    • Incorporating sustainable practices into our daily operation

    What we're doing:

    • offering a variety of whole grains daily including buckwheat, bulgur, brown rice, wheatberries, whole wheat bread, whole wheat pasta, etc. 
    • offering more plant based proteins daily including beans and legumes, animal free burgers and sausages, and housing vegan stations at two dining hall locations
    • sourcing local ingredients when possible
    • featuring vegan stations at two dining hall locations
